INGREDIENTS :

  • Potatoes - 2 cup cubed
  • Cauliflower florets - 2 cup
  • Asafoetida - 1/8 tsp
  • Onion - 1 cup sliced
  • Coriander leaves - 1 cup chopped
  • Tomato - 1 cup cubed
  • Garam masala powder - 1 tbsp
  • Red chili powder - 1 tbsp
  • Cumin seeds - 1 tbsp
  • Turmeric powder - 1 tbsp
  • Coriander powder - 1 tbsp
  • Salt as per taste
  • Olive oil - 1 tbsp


PROCEDURE

  1. Heat olive oil in a pan on medium flame. 
  2. Add asafoetida and cumin seeds. Let the seeds crackle.
  3. Add onion and fry till translucent.
  4. Add potatoes and cauliflower and fry a little.
  5. Add all the spices. Mix everything well and fry for 20 seconds.
  6. Add tomatoes and salt and mix.
  7. Cover and cook on medium flame for 5 minutes. After 5 minutes veggies will release some water. 
  8. Mix well Cover and cook for again for 2 minutes.
  9. Uncover and cook on high flame till all water is dried up.
  10. Add garam masala powder and mix well.
  11. Add coriander leaves and mix well.
  12. Aloo Gobhi Ki Sukhi Sabzi is ready to serve.


TIPS :

  1. Salt should be added only after frying the veggies a bit else they will release lot of water making recipe mushy.
  2. Coriander leaves makes recipe more flavorful.
