INGREDIENTS :
- Cabbage - 2 cups shredded
- Potatoes - 2 medium cubed
- Tomatoes - 2 sliced
- Garlic - 1 tbsp chopped
- Green chillies - 1 tbsp chopped
- Asafoetida - 1/4 tsp
- Fenugreek seeds -1 tsp
- Nigella seeds - 1 tsp
- Fennel seeds - 1 tsp
- Red chilly powder - 1 tbsp
- Turmeric powder - 1 tbsp
- Salt as per taste
- Olive oil - 1 tbsp
PROCEDURE :
- In a pan add olive oil and heat on medium flame.
- Add asafoetida, fenugreek seeds, nigella seeds and fennel seeds.Fry for 10 seconds.
- Add chopped garlic and green chilies. Fry till garlic turns brown.
- Add potatoes and fry for 30 seconds.
- Add turmeric powder and red chilli powder. Fry for 10 -15 seconds on medium flame.
- Add tomatoes and fry till they soften a bit.
- Add shredded cabbage. Mix well. Cover and cook for 30 seconds.
- Add salt and mix well. Cook for 1 minute uncovered.
- Potato Cabbage Fry is ready to serve.
TIPS :
- Do not add salt in the beginning as cabbage will shrink while cooking and salt imbalance can make recipe bitter.
- Cover and cook for faster cooking.
