A quick and easy breakfast or snack recipe. Loaded with veggies and protein rich with rava/ semolina. Tastes best when served hot with any kind of dip or chutney.

INGREDIENTS :
- Semolina / rava / sooji - 1 cup
- Yoghurt - 1 cup
- Eno fruit salt - 1 tsp
- Salt as per taste
- Red chili powder -1 tbsp
- Cinnamon powder - 1/2 tsp
- Coriander powder - 1 tbsp
- Boiled corn - 1 cup
- Capsicum - 1/2 cup diced
- Red bell pepper - 1 cup diced
- Coriander leaves - 1 cup chopped
- Olive oil - 1 tsp
PROCEDURE :
- In a mixing bowl add semolina and yogurt and mix well.
- Add water gradually and make a thick smooth batter. Batter should be lump free.
- Add all spices and salt and mix well.Cover and let it rest for 10 minutes. After 10 minutes give a good stir to the batter.
- Add all the veggies and mix everything together. If batter is thick then add little water and mix.
- Add eno fruit salt and mix the batter the conituously till its light and fluffy.
- Heat 1 tsp olive oil in a pan on medium flame. When oil is hot enough pour the entire batter on the pan and spread it uniformly.
- Cover and cook on medium flame till top is dry. Lift from sides and flip to cook. Cover and cook for 2 minutes. Uncover and cook on medium high flame till bottom is crisp. Flip and check other side.
- Rava Veggie Snack is ready to serve.
TIPS :
- Batter should neither be too thick nor too thin.
- Add end just before adding batter to pan.
- Any more veggies of choice can be added.
- Keep leftover in a zip lock and freeze it for later cravings.
