Semolina Corn Pancake Recipe

 

A quick and easy breakfast or snack recipe. Loaded with veggies and protein rich with rava/ semolina. Tastes best when served hot with any kind of dip or chutney.

PREPARATION TIME : 10 minutes 

COOKING TIME : 10 minutes


INGREDIENTS :

  • Semolina / rava / sooji - 1 cup
  • Yoghurt - 1 cup
  • Eno fruit salt - 1 tsp
  • Salt as per taste
  • Red chili powder -1 tbsp
  • Cinnamon powder - 1/2 tsp
  • Coriander powder - 1 tbsp
  • Boiled corn - 1 cup
  • Capsicum - 1/2 cup diced
  • Red bell pepper - 1 cup diced
  • Coriander leaves - 1 cup chopped
  • Olive oil - 1 tsp

PROCEDURE : 

  1. In a mixing bowl add semolina and yogurt and mix well.
  2. Add water gradually and make a thick smooth batter. Batter should be lump free.
  3. Add all spices and salt and mix well.Cover and let it rest for 10 minutes. After 10 minutes give a good stir to the batter.
  4. Add all the veggies and mix everything together. If batter is thick then add little water and mix.
  5. Add eno fruit salt and  mix the batter the conituously till its light and fluffy.
  6. Heat 1 tsp olive oil in a pan on medium flame. When oil is hot enough pour the entire batter on the pan and spread it uniformly.
  7. Cover and cook on medium flame till top is dry. Lift from sides and flip to cook. Cover and cook for 2 minutes. Uncover and cook on medium high flame till bottom is crisp. Flip and check other side.
  8. Rava Veggie Snack is ready to serve.

TIPS :

  1. Batter should neither be too thick nor too thin.
  2. Add end just before adding batter to pan.
  3. Any more veggies of choice can be added.
  4. Keep leftover in a zip lock and freeze it for later cravings.
