Bottle Gourd in Yoghurt Curry Recipe


A delectable recipe for bottle gourd. Different version of regular pakora kadhi. Tastes awesome with kachori or steamed rice and when served hot.

PREPARATION TIME : 10 minutes 

COOKING TIME : 15 minutes


INGREDIENTS :

  • Bottle Gourd (Lauki) - 2 cups cubed
  • Curd - 1 cup
  • Chickpea Flour (Besan) - 1/2 cup
  • Turmeric powder -1 tablespoon 
  • Salt as per taste
  • Red chili powder - 1 teaspoon 
  • Black mustard (Rai) - 1 teaspoon 
  • Curry leaves - 5 or 6
  • Tomato - 1 medium cubed
  • Green chili - 1 tablespoon chopped
  • Olive oil - 1 tablespoon 
  • Ghee - 1 tablespoon 


PROCEDURE : 

  1. In a mixing bowl add yogurt, gram flour, turmeric powder and salt. Whisk till smooth batter is formed. Add 1.5 glass water and mixed completely for watery consistency.
  2. In a pressure cooker heat olive oil on low medium heat. Add green chili’s and fry a little. Add tomato and fry for 10 seconds. Add bottle gourd and fry for 20 seconds. Add yogurt and gram flour mixture and mix well. Tighten the pressure cooker lid and cook on medium flame for 4 - 5 whistles.
  3. Let steam release completely and open the lid. Check the consistency. Nice aroma of cooked besan should be coming.
  4. In a small tadka pan, heat ghee on medium flame. Add rai, curry leaves and red chili powder .Top kadhi with a spoonful of this mixture.
  5. Lauki Ki Kadhi is ready to serve.


TIPS :

  1. Yogurt and gram flour mixture should be watery consistency, else besan will burn while cooking under pressure.
  2. Do not over cook bottle gourd when frying as they will turn mushy when pressure cooked.
  3. Serve hot with hot rice or chapati.
