Omelet Curry | Egg Omelet Curry Recipe

COOKING TIME : 15 minutes


INGREDIENTS :

  • Eggs - 5 or 6
  • Tomato puree -  1 cup
  • Onion - 2 large chopped
  • Green chilis - 1 tbsp chopped
  • Ginger garlic paste - 1 tbsp
  • Coriander powder -1 tbsp
  • Salt as per taste
  • Garam masala powder -1 tbsp
  • Red chili powder - 1 tbsp
  • Turmeric powder - 1 tbsp


PROCEDURE : 


1. Preparing Omelet:
In a mixing bowl add eggs and beat them till frothy. Add green chili and half amount of each of the spices and salt except garam masala. Mix well till well blended.Add half of chopped onions and mix well with batter. Heat 1 tbsp olive oil in a pan on medium flame. Pour egg batter and cover and cook for 2 minutes on medium flame. Open the lid when the omelet is not moist from above. Cover with a plate and flip omelet on the plate. Transfer the omelet again to pan to cook from other side too. Transfer the cooked omelet to a plate. 

2. Preparing Gravy.
Heat 1 tbsp mustard oil in a pan on medium heat. Add remains minion and fry till brown. Add ginger garlic paste and fry a little. Add all the remaining spices and salt except garam masala and fry little. Add tomato puree and fry till the paste starts leaving pan. Add half glass of water and stir well. Cut omelet into pieces. Drop the omelet pieces into boiling gravy. Cover and cook for a minute Add garam masala powder and boil for a minutes.  

3. Egg Omelet Curry is ready to serve.


TIPS :

  1. Make thick omelet for better texture on curry.
  2. Serve with boiled rice rice or chapati
