A healthy parantha recipe where no dough is required. Made with liquid batter. Very crispy and tastes no less that parantha made with dough. No fuss of make dough.

PREPARATION TIME : 10 minutes
COOKING TIME : 15 minutes
INGREDIENTS :
- Whole wheat flour - 1 cup
- Carrot - 1 cup grated
- Green chili - 2
- Ginger - 1 inch piece
- Mint leaves - 1/2 cup
- Salt as per taste
- Turmeric powder - 1 tbsp
- Garam masala powder - 1 tbsp
- Olive oil - 1 tbsp
PROCEDURE :
- Grind chili and ginger to a paste with1 tbsp water.
- In a mixing bowl add flour and all spices and mix well.
- Add 2 cups hot water gradually to make lump free batter. Add ginger chili paste, mint and carrot and mix well. Add oil and mix well. Batter should be flowing consistency. Let batter rest for 10 minutes.
- Heat a non stick pan on medium low heat. Add a ladleful of batter and spread it with the bake of spoon. Cover and cook till top of parantha gets dry.
- Uncover and flip to cook from other side. Keep flipping and cooking till both sides and crisp and cooked well. Transfer to a plate. Make parantha with the remaining batter.
- Carrot Parantha is ready to serve.
TIPS :
- Use hot water for soft paranthas.
- Add water gradually else batter will have lots of lumps.
- Batter should be lump free.
- Flame should be medium else paranthas will burn.
